Due to its particularly flat design, coupled with its large heat exchanger surface with 8 rows of tubes in the direction of the air, the KBKT high-performance air cooler is particularly suitable for gentle air conditioning of sensitive refrigerated goods, e.g. baked goods, dough pieces and fermentation interruptions.

Minimum dehumidification



The cooling of sensitive goods requires special challenges for the air coolers. To preserve the best possible quality of the food, the smallest possible temperature differences and low dehumidification are required. To ensure this, an air cooler needs a large evaporator surface.
The KBKT was designed to meet precisely these requirements and impresses with very low dehumidification levels.

Climate heating for optimal humidity control


Minimal temperature differences are an equally important aspect for guaranteed consistently high product quality.
When air is cooled by an air cooler, the humidity condenses on the cold fins of the air cooler. This is discharged via the condensate drain. The dehumidified air can then be reheated by the air-conditioning heater to keep the temperature difference low. This makes it possible to dehumidify and keep the temperature in the room at a defined temperature operating point.

Hygiene standards based on the HACCP concept

Hygiene plays a particularly important role in the food industry. That is why we base the design features of our air coolers on the HACCP concept during development and offer maximum serviceability for easy cleaning.
Smooth surfaces, rounded corners and removable drip trays and side covers provide easy access and enable hygienic operation. Additional configurable options such as swivel fans and the repair/service switch make cleaning work even more efficient.

Defrosting

Bakery cooling - FHV - Biaggini

For the daily fresh baked goods in the bakery displays, sophisticated refrigeration technology is required in particular to meet the requirements of the variety of different baked goods. Fast freezing times, small temperature differences, air distribution and humidity control during storage add complexity to the task. For careful conditioning of sensitive bakery goods, the focus of evaporators is on the largest possible heat exchanger surface area with low dehumidification. For the conversion of one of the largest bakeries in Switzerland, Biaggini installed a CO2 refrigeration system with 250 kW cooling capacity, including heat recovery, air conditioning, and humidity control in the cold rooms. Biaggini relies on the reliable technology of Roller FHV air coolers when it comes to cooling the refrigeration and deep-freeze chambers.
